In a weeks time (hard to believe!) I will be moving into a
wonderful small London flat with my boyfriend Tom. So, while I have spent a lot (probably too much) of my time this summer looking at house/DIY blogs for decoration ideas, I
have posted nothing about my food endeavors. Not good. But… while Tom starts work almost
immediately (bummer), I have two full weeks to kill before my job teaching
first graders begins! That means… no more disappearing and more posting. I thought as I'll be posting about new things to come I'd post first about something old...
I grew up on these no-bake cocoa oatmeal cookies. My mother,
as fantastic as she is, is not the world’s greatest cook (although she IS
getting better) so these cookies were made for every school bake sale or
sleepover. They’re easy and delicious and a nice blast from the past. Good for
the end of a relaxed dinner/cocktail night with friends- whip them up before
hand and let them set while you eat/drink bottles (yes bottles) of wine.
Ingredients (for 20 cookies)
2 cups white sugar
3 tablespoons cocoa powder (I used goats butter, you could
also use a non-dairy alternative sold at Tesco/M&S)
½ cup milk (again, I used goats milk but you can use soy-
avoid rice and almond milk as they’re thinner)
2 cups rolled oatmeal
¼ cup peanut butter (crunchy or smooth)
1 teaspoon vanilla
Directions
1.Mix cocoa, butter, milk and sugar in a pot and boil on
medium high heat for one minute
2. Take off heat and mix in oatmeal, peanut butter and
vanilla
3. Mix until starting to thicken (about a minute- do not allow it to set) and spoon onto
tin foil/wax paper. Wait for them to set/cool and enjoy! You will have no
leftovers!
Like I said, I've been reading a lot of blogs this summer so, along with posting about various gluten-free/dairy-free recipes I'll also post about our new place. As new property renters we have litle money to splash out on pottery barn and ikea so we're going to have to be creative. Luckily, London is just the place to do that - with all the markets, car boot sales and antique shops. There are also plenty of food markets which is (hopefully) going to make my attempt to cook in season easier! I suggest you try it. There are fantastic websites (www. eatseasonably.co.uk and bbc.co.uk/food/seasons/) with information about what fruit and veg is in season each month and various recipes to try. Right now I'm on a beet craze! Anyways... there's lots more to come!
